Cyclodextrin (CD) is a general term for a series of cyclic oligosaccharides produced by amylose under the action of cyclodextrin glucosyltransferase produced by Bacillus, usually containing 6 to 12 D-pyrans Glucose unit. Among them, the most studied and of practical significance are molecules containing 6, 7, and 8 glucose units, which are called alpha-, beta-, and gama-cyclodextrin, respectively (Figure 1). Based on the results of X-ray crystal diffraction, infrared spectroscopy, and nuclear magnetic resonance spectroscopy, it is determined that each D(+)-glucopyranose constituting the cyclodextrin molecule is a chair conformation. Each glucose unit is linked by a 1,4-glycosidic bond to form a ring. Since the glycosidic bond connecting the glucose unit cannot rotate freely, cyclodextrin is not a cylindrical molecule but a slightly conical ring.
